I would say it all depends on what you like to do and what hobbies you have.

Jackpot:

It has been at least 15 years since I have been there but besides the main casinos there, I do not remember much else to do there.

Wendover (my main stop):

They just moved the main poker room from Montego Bay to the Peppermill and with that it appears that the Peppermill has issued new chips for the change.

For sites, there is the museum at the airport with the history of the area mainly focusing on WWII and the development of the Atomic bomb and Enola Gay, the airplane prop for Con Air, Wendover Will, the Lincoln Highway, The telegraph pole where the west and east meet or Blue Lakes (which is a nature hot spring).

Wells:

The only casinos left are at gas stops and are slots only but I enjoy going to the old main drag and looking at the old architecture and seeing the shells of the casinos that use to be there. There is also a museum on the main drag that has a lot of history and is open 7 days a week (as of a year ago) that is run by a couple that will take all the time in the world to talk about what you want to.

Elko:

if you are going for casino chips, Stockmens and Red lIon are the only places to get them. The nice thing is that the Red Lion has a lot of $5 chips in circulation and easy to get 8-10 chips in one stop. There is also an antique store across from the Commercial and the couple there have a little of everything including about 50+ chips from all over the state. There is also a lot of old architecture, casinos and bars to check out.

If you want a great meal then you need to go to the Star Hotel. They serve traditional Basque meals family style so if it is just you then go with the steak (which is the best in town).

If you can not tell, these are my favorite places to visit when I can.

P.S. if you are into the history, architecture or photography, then check out Carlin as well. The original street from when the railroad dictated everything is still there with a full running bar. There is also two casinos there as well, but like everything else, they are slots only.
