I guess like most things it depends on the casino. I know the rates that I was once offered in the Golden Nugget in LV were probably the worst I have ever seen - this was about 15 yrs ago but were around 20% different to what I could have gotten at the bank before I travelled (I only asked because I still had Sterling with me and thought about settling my hotel bill in cash). Haven't bothered asking at a casino since!
