Hey Michael!
In the end only you can decide what you like. The House chips alone are alot to collect. Some casinos may be on their 20th issue. Collect the House chips and if you see a LE that you like every once in a while pick it up. Variety is the spice of life. You probably don't need(or want) a LE Valentine's Day chip with a big cartoon frog on it. However, if you were a "Trekkie" you may want a LE LV Hilton Star Trek Chip with a picture of the U.S.S. Enterprise NCC-1701 on it. When you get into chips like that you are now competing against not only chippers, but "Trekkies" who want the chip, but don't usually collect Casino Chips. These are highly "cross-collectable" and so the demand side pushes up the price. I like to display my chips - so chips with bold graphics and sharp color combinations are appealing. Collect what you like and you can't go wrong.
