It depends.

If you want to sell the collection quickly, there are brokers who buy entire collections, but you may not get as much for it as you'd like. I know of one broker who will only pay 50% of face value for chip collections.

If you have a collection that has quite a few valuable chips, selling them on eBay or Jackpot or Collecting Fun would be the way to go, particularly if you don't mind taking some time to do it. If your collection is well organized and you already have scans of most or all of your chips, Collecting Fun would be worth a shot. It'd save you the hassle of listing fees and commissions you'd pay on the auction sites.
