Walter, those new Plaza chips ("N" mintmark) are made by Nevada Gaming Chip company in Las Vegas.

From looking at their catalog, these are from the "700 series" style (pages14-15).
Looks like they can blend any color you want, but looking at the stock roulette colors (page 20), that $500 is probably their "Mint Green" color, though they do have a Teal and an Aqua too that are similar.

Regarding their holographic chip inlays, those are shown/discussed on pages 23-25 in the catalog.

I stopped in there once -- a very small place, not really set up for public visitors, though they will make personal / home game sets. I got a couple of samples, though none had the company name or the colorful parrot image on them. It felt like I was the first drop-in visitor he had in a month!
