Con Air is a good one, but my top choice for destroying Las Vegas is "Mars Attacks!" A cheesy sci-fi comedy / parody, but over-the-top fun too!

The Martian spacecraft destroys the Landmark Hotel-Casino via CGI and miniature model filming, interspersed with footage from the real Landmark implosion. Lots of other craziness too.
