Those plastic encased tokens are known to collectors as "Silver Strikes". I'd suggest posting them on TheStrikePoint.com (see icon link at the top of the page). Photos are the best way to show them, as with chips and tokens.

In arranging your collection, I suggest you divide it first by chips / tokens / Silver Strikes.
Then group all you chips by geographic region (i.e. Nevada-Las Vegas, Nevada-other locations, Other USA states, Indian casinos, Non-USA.
Finally group the chips alphabetically (i.e. for your Las Vegas chips, arrange them A to Z).

Then just start scanning or photographing them individually or a page at a time.

Generally speaking, the chips will have more collector interest than tokens. And the older the better, in general.
Some of the newer chips (i.e. Limited Edition / Commemoratives) may not have significant interest, but there are exceptions.
