Jim, Good question. In principle, there...

are two types of ccgtcc "Convention chips". Those issued as live-action, gaming chips by the host casino (and sometimes by other casinos in honor of the Club's Convention) and those issued by the ccgtcc to commemorate each year's Convention. The later being sold at the Convention (usually for $5 each) but they are not live-action, playable in the casino chips. These Club chips were sometimes given out (numbered and un-numbered) as a presentation souvenir to Club volunteers.

There is a third category and that is a casino issued, no cash value (NCV) chip that also commemorates the ccgtcc Convention. In the past this has included two Hard Rock relaeses ("Money For Nothing" and "Pink Taco") and a Riviera release ("A Little Birdie Told Us!").

I guess a forth example might be the NCVs ordered by the ccgtcc for use in (or as commemoratives of) the Poker and Blackjack Tournaments. These sets are also offered to Club members (for around $15) through sales at the Convention and through Club Promotions.

I think this kind of covers everything along these lines, and if not, I'm sure someone will be along to add more details.

The basic question back to you, the chips you have, do they have a denomination with a dollar sign? If so, they were issued by the casino as live-action chips and were available from the cage of the respective casino(s).
