My info may be out of date, but as of a few years ago in Atlantic City if you cashed $10,001 or more in a single day, you had to provide SSN info. There was a sign at the cage warning of a federal offense if you purposely evaded this rule.
Las Vegas may be different, or the laws may have changed.
