Boxing

Boxing judges are licensed by the state and are therefore (at least in theory) independent arbiters of the event's outcome. You cannot bet on yesterday's matches - it would be as foolish as the old joke about the guy who was watching the baseball news on the bar's TV when a fella down the bar said "I'll bet the right fielder drops the ball." The fool took the bet, and sure enough the fielder dropped the fly ball. The other fella said "I can't take your money - I saw that replay earlier today." And the fool said "no, take the money. I saw the replay earlier, too. I just didn't think he would drop the ball again."

Can you bet on figure skating in Nevada? That would be a great example of a sporting event where the independence of the judging has been suspect.
