Even if the cameras were not rolling during the break, the high denomination chips are supposed to be clearly visible during play for other players to see. This is so the other players can tell what you have during a hand. I'm sure all players current stacks were clearly taped during the last hand before that break. The first hand after the break would be on tape too. Appears to me someone could go back and review those hands and try to determine a chip count for each player during those hands. Sure it won't be accurate but you should be able to detect a big increase in a couple players stacks (if they used the one player as a bank method which is sometimes used to facilitate the color up process).
