The order the chips show up is by casino name that is used when you select the casino and not by typing it in the casino name.

As for the pictures, delete them and upload them again, using the face of the chip that you want to see last as the last upload. When you view details people can see both sides.

Since you started with cruise ships its probably hard to select a casino name. Take a look at this one and see what I mean. This is my horse collection and the first chip did not have a casino list to select from so it will always be first in alpha order. See where it has the "?" that means no casino name was selected so it falls first in line.
