A Question of Color??

I have noticed that certain value chips are usually specific colors. $1 is white, $2.50 is pink, $5 is red, $25 is green and $100 is black. I know there are tons of exceptions, but this seems to be the norm. When did these colors come in to use to represent these values? It seems even in the old ivory chips red is often on the "5" chip. Also when did colors on saddle cloths start representing numbers in horse racing?
