For first timers I'd recommend going to the top of the Stratosphere and check out the city lights as night falls... it's beautiful and gives one a great view of the strip at nite. the Top of the World restaurant is a good place to eat and see the city.
Another cool thing to do is take a helicopter trip around the strip at nite... it's cheap and fun.
