The episode you mentioned was filmed at the Aladdin. I don't know what type of chips were used for the table games scenes, but the dealers were actors.
There was another show filmed at the Aladdin a while ago for a new series starting in the June or July, and they used actual Aladdin dealers, but not me. 
It's called "Lucky".
